This is a favorite dish of mine and we often had it when I was growing up. It is tasty and easy to do, and is vegetarian and vegan. It's also a dish you can have as a main meal or appetizer.
You can have it on its own or with pita bread. It can also be eaten cold or warm.
500 g fresh green beans trimmed
500 g ripe tomatoes
2 ½ tbsp. extra-virgin olive oil
1 medium onion
8 garlic cloves
1 tsp salt
½ tsp black pepper
1 tbsp tomato paste
Peel the onion and dice thinly
Peel the garlic cloves and dice thinly
Wash and dice the tomatoes. You can peel the tomatoes as well or keep them with the skin, to your taste
Wash and cut off the stalk tips of the beans, and cut into 2 pieces
Heat the oil over medium-high, add the onions and the garlic and cook until wilted or slightly browned.
Add in the green beans, the salt and black pepper. Reduce heat to low, cover and cook for 15 minutes. Don't forget to stir occasionally.
Add the tomatoes and about 2 tbsp water. Bring to a boil over medium-high heat. Then reduce heat to low again and cook for about 20 minutes, or until beans are soft.
Add tomato paste and cook until the sauce thickens a bit.
Transfer to a serving bowl and eat warm or cold with pita bread.
