Mediterranean green beans in olive oil - Loubieh bi zeit

This is a favorite dish of mine and we often had it when I was growing up. It is tasty and easy to do, and is vegetarian and vegan. It's also a dish you can have as a main meal or appetizer.

You can have it on its own or with pita bread. It can also be eaten cold or warm.


  • 500 g fresh green beans trimmed

  • 500 g ripe tomatoes

  • 2 ½ tbsp. extra-virgin olive oil

  • 1 medium onion

  • 8 garlic cloves

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp tomato paste


  • Peel the onion and dice thinly

  • Peel the garlic cloves and dice thinly

  • Wash and dice the tomatoes. You can peel the tomatoes as well or keep them with the skin, to your taste

  • Wash and cut off the stalk tips of the beans, and cut into 2 pieces

  • Heat the oil over medium-high, add the onions and the garlic and cook until wilted or slightly browned.

  • Add in the green beans, the salt and black pepper. Reduce heat to low, cover and cook for 15 minutes. Don't forget to stir occasionally.

  • Add the tomatoes and about 2 tbsp water. Bring to a boil over medium-high heat. Then reduce heat to low again and cook for about 20 minutes, or until beans are soft.

  • Add tomato paste and cook until the sauce thickens a bit.

  • Transfer to a serving bowl and eat warm or cold with pita bread.
